![]() PREPARATION TIME: 30 MINUTES Ingredients 8 fresh apricots 500 gm butter 500 gm icing sugar 3 eggs, lightly beaten 250 gm flour, for the dough 10-15 gm baking powder 100 gm almond flakes 100 gm butter 100 gm flour, for the crumble salt to taste Method Peel and slice the apricots. Beat butter and sugar till smooth. Add a pinch of salt to it. Incorporate eggs, baking powder and flour slowly into the mixture Knead into dough and roll it to a thickness of 4-inches. Cut it into a round shape and place it in a 9—inch pie mould. Arrange apricot on the base of dough. Top with crumble mixture. Cover the mould with a strip of pie dough. Bake it in microwave for five minutes until juice forms bubbles that burst slowly. De-mould and serve. For the crumble mixture Rub almond flakes and 100 gm flour. Mix well. SERVES 8 |
