Gulab Ka Sharbat
INGREDIENTS:
2 cups rose petals (washed well and patted dry on a paper towel) 1 cup sugar 1/2 tsp cardamom powder Juice of 2 lemons (strained) 1 cup pomergranate juice (optional) PREPARATION: Coarsely crush the rose petals in a mortar and pestle and then put into a deep glass bowl. Pour 1 cup of boiling water over the paste and add the cardamom powder. Mix well, cover and allow to steep overnight. In the morning, strain through a very fine sieve. Add the sugar and stir till dissolved - do not heat. When the sugar is dissolved, add in the lemon and pomergranate juices and mix well. The syrup is ready now and can be stored in the fridge for 3-4 days. To serve, pour some syrup into a tall glass, mix with chilled water to taste and add crushed ice. |

Chatpata Nimboo Pani
INGREDIENTS:
Juice of 4 lemons Sugar/honey to taste 2 tbsps Jaljira powder (available at most Indian groceries) Chilled water Crushed ice Lemon slices to garnish PREPARATION: Squeeze all lemons to remove juice and strain the juice to remove seeds. Pour into a large jug. Add all the remaining ingredients to get desired strength and sweetness and mix well. Serve in chilled glasses garnished with lemon slices. |

Kayree Panha (raw mango drink)
INGREDIENTS:
4 medium-sized raw green mangoes 2 cups sugar 1 cup water 1 tbsp coarsely ground black rock salt 1 tsp freshly ground pepper 2 tbsps Aniseed/fennel seeds ground coarsely 2 tbsps cumin seeds roasted and ground coarsely Chilled water Crushed ice Sprigs of mint to garnish PREPARATION: Wash, peel and grate the raw mangoes. Mix the mangoes, sugar and water in a deep saucepan and boil till the mangoes are soft. Put this mixture into a food processor and blend till smooth. Put the blended mix back into the saucepan and on a medium flame. Add the remaining ingredients and cook for another 20 minutes. Take off from the fire and allow to cool completely. Pour into glasses, dilute with a little chilled water if needed, mix well and add crushed ice. |

2 cups/ glasses or fresh yoghurt (should not be sour) 2 small cucumbers peeled and cut into cubes 2 cloves garlic 1 tsp finely chopped ginger 1 tsp lime juice 1 cup crushed ice Salt to taste 1/4 tsp Chaat Masala (available at most Indian grocery stores) Sprigs of mint to garnish PREPARATION: Mix all the ingredients (except the Chaat Masala and mint) and blend in a blender or food processor till smooth. Pour into tall, chilled glasses and sprinkle with a pinch each Chaat Masala. Garnish with a sprig of mint each and serve immediately. |

Apple Cider
INGREDIENTS:
8 cups of apple juice or apple cider 1 large 6-inch stick of cinnamon 8 cloves 4 pods green cardamom split 4 peppercorns 1/2 tsp ground/crsuhed ginger 1/4 cup brown sugar PREPARATION: Put all the ingredients into a large pot and bring to a boil on a medium flame. Simmer and boil on low heat for another 10 minutes. Strain and serve warm. |

Delhi-style Cold Coffee
INGREDIENTS:
2 glasses chilled full cream milk/ whole milk 2 tsps instant coffee of your choice Sugar to taste 1/2 glass crushed ice PREPARATION: Put all the ingredients together in a blender and whisk till well mixed. Pour into tall frosted glasses, add a straw and serve! |

Pomegranate Spritzers
Ingredients1 cup pomegranate syrup
1 750 ml bottle fruity white wine, such as Riesling or Chardonnay(about 3 cups), chilled 1 cup sparkling water, chilled Pomegranate seeds for garnishing (optional) Blood orange wedges (optional) Directions Add 2 tablespoons pomegranate syrup to each of 8 champagne flutes. In a 1-1/2- to 2-quart pitcher combine the wine and sparkling water. Pour wine mixture into each glass to serve. If desired, garnish each with pomegranate seeds and/or a blood orange wedge. If desired, add ice to the glasses and serve |

Ingredients 1 tsp Honey 1 ripe Banana 3 cups of Soymilk 1 tsp Vanilla Essence 1 cup frozen Strawberries Directions This is really a very simple recipe. The key about this recipe is use of Honey instead of Sugar, Soymilk instead of regular milk and strawberries to enrich the nutrient value. You can omit the vanilla essence if you are using a vanilla flavored soy milk. Place all the ingredients in a blender and blend. Serve cold. |

6 ice cubes 2 cups cubed seeded watermelon 1 teaspoon honey Directions Place the ice cubes into a blender. Cover, and pulse until crushed. Add the watermelon and blend for about 1 minute, until slushy. Add the honey, and blend for about 10 seconds. |

Elaichi Doodh
Ingredients
15 blanched almonds 4-5 ice cubes 3 cups whole milk 1/2 tsp. cardamom seeds sugar to taste Directions Combine the almonds & cardamom seeds in a blender and process for 2-3 minutes or until the nuts are reduced to a fine puree. Add milk to it and further blend on low speed for 15-20 seconds. Now add ice cubes to it and blend it for another 10 seconds. Add the sweetner. Serve it. Amazing for summers. For winters, You can bring it to boil over moderately high heat instead of adding ice cubes to it and stir constantly. Indians will pour the milk back and forth from one pan to another to make the milk frothy much like a low tech cappuccino machine. The frothy milk is then served |

Citrus Mint Cooler
Ingredients
1 cup fresh lemon juice 1 cup fresh orange juice 2 cups sugar 2 1/2 cups water 10 sprigs mint 32 fluid ounces ginger ale water Directions Place first five ingredients in a saucepan; bring to a boil, stirring until sugar dissolves. Cover Remove from heat and let steep until cool. Strain. Cover and refrigerate. To serve, fill glasses or a pitcher with equal amounts of fruit juice, ginger ale and water. Add ice and serve immediately. |

Ingredients
1 cup milk 1 cup peeled and chopped ripe mango or 1/2 cup mango pulp sugar to taste (less if pulp is used) 1/4th tsp. cardamom powder (optional) Few ice-cubes Directions Combine all ingredients and blend until smooth in a blender. Strain through a sieve, pushing as much liquid as possible. If the pulp has been used there is no need to strain. Pour in glasses and serve. Garnish with top of a mint sprig |
