Five a day keeps the doctor away
    by: Swati Jobanputra

Health experts now recommend that we eat at least three to five servings of vegetables and two to three servings of fruit every day. WHY? Heart disease, stroke, blindness, cancers of the lung, colon, stomach, esophagus, mouth, throat and possibly the bladder and cervix. How many more reasons do you need?

Most fruits and vegetables are low in fat and calories, cholesterol free, loaded with vitamins and minerals and rich in fiber. Besides this, they also contain phytochemicals and antioxidants.

Some of the naturally occurring chemicals in plants are referred to as phytochemicals. It is believed that these naturally occurring substances may protect us from the damaging effects of toxic substances that can result in cancer, heart disease and promote the aging process. Vitamins A, C and E are some examples of phytochemicals. They are better known as antioxidants. Scientists believe that the antioxidants in plant foods may help reduce the risk of above-mentioned diseases. Some vitamins are toxic in large doses so please seek your doctor´s advice before taking these supplements.

So a sure way to insure your personal health is to include a wide variety of plant foods, including vegetables and fruits. The easiest way to get enough is to have three servings of vegetables at dinner and squeeze in a couple of servings of fruits as snacks. Half a cup of most cooked vegetables, a cup of salad or a medium sized piece of most fruit each constitute a serving.

Here are some suggestions to reach your goal:

Always keep a bag of ready cut salads available in the refrigerator. Grocery stores carry a wide variety. Raw fruits and vegetables are better as cooking destroys some of the nutrients.

Carry fruits in the car. They make a handy snack when you are stuck in traffic.

Keep a fruit on your desk at work. You are more likely to eat it if you see it.

Steam or microwave frozen vegetables. Add a touch of butter, garlic or lemon juice.

Add vegetables to rice pasta or soups. Stuff them in pita bread, roll them in tortillas or in an omelet.

Sauté vegetables in a little oil at high flame.
