Ingredients
2 kg boneless chicken tikkas
370 ml oil
62 gm besan
64 gm dry breadcrumbs
5 egg yolks
For the marinade
17 gm salt
3 gm kasoori methi
12 gm green chillies
14 gm coriander
50 gm ginger-garlic paste
24 ml vinegar
Method
Chop the green chillies and coriander.
Roughly crush the breadcrumbs.
Prepare the marinade by mixing all the ingredients together.
Marinate the chicken tikkas in the marinade for 30 minutes and leave aside to rest.
Heat oil; add besan and bhuno for 3 minutes. Add marinated chicken tikkas.
Sauté for 3-4 minutes on a slow fire. Add the breadcrumbs.
This will absorb excess oil. Remove from fire immediately after adding breadcrumbs.
Spread the chicken tikkas on the table top and cool.
Put 8 pieces of chicken tikka onto a skewer and roast for 6 minutes.
Coat with egg yolks and roast further till done.
Serve garnished with chaat masala.
