Walnut and date cake



Ingredients
800 gms dates, pitted and chopped
800 gms walnuts, coarsely chopped
1 cup white sugar
1 tbsp baking powder

1 1/4 cups flour
4 egg yolks
4 egg whites

Method
Preheat oven to 300ºF (150ºC). Grease and flour a 10-inch rectangular pan. In a large bowl, combine dates, walnuts, sugar, baking powder and flour. Stir in egg yolks with a wooden spoon. In a large bowl, beat egg whites until stiff. Fold the whites into the fruit/nut mixture until all the ingredients are mixed well. Bake in a preheated oven for 90 minutes. Let it cool in the pan for 10 minutes, then turn out onto a wire rack and leave to cool.
