    Stuffed Chicken Breast
    Ingredients:
    Four chicken breasts (with bone and wing)
    Salt
    Garlic powder (1 tsp)
    Olive oil
    1 cup milk
    2 eggs
    Bread crumbs
    Ingredients for Spinach & Cheese Stuffing:
    1 onion, chopped
    1 tbsp. butter
    1 tbsp. olive oil
    1 lb. spinach, washed, stemmed and coarsely chopped or 1 box frozen spinach
    15 oz. Ricotta cheese
    1/2 c. grated Parmesan cheese
    1 tsp oregano leaves
    Freshly ground black pepper



    Directions for Chicken:
    Mix the salt and garlic powder in olive oil and rub over the chicken
    Set aside
    Directions for Spinach and Cheese Stuffing:
    Cook the onion in the butter and oil until translucent
    Add spinach and cook until moisture has evaporated
    Transfer to bowl
    Add cheeses, oregano, and black pepper
    Directions for Frying:
    Whisk the eggs and milk to form a smooth mixture
    Make slits in the chicken breast and stuff the spinach and cheese mixture
    Dip the stuffed chicken breasts in the egg and milk mixture
    Roll in bread crumbs (coating evenly)
    Heat oil in a wok
    On medium heat, fry each chicken breast 5-7 minutes on each side (or until golden brown)
    Serve with french fries and cole slaw
