Quick Lemon Chicken

Ingredients
1 Clove garlic
1 Lemon
2 Tablespoons plain flour
500g/2oz boneless,
skinless chicken thighs
3 Tablespoons olive oil
2.5cm/1in piece root ginger
450ml3/4 pint chicken stock
1 teaspoon caster sugar
1 egg Yolk
2 Tablespoons chopped fresh coriander
salt and black pepper

(1) Peel and chop the garlic,
Grate the Rind and squeeze the lemon.
Mix together the flour, lemon rind and
garlic in one bowl.
Cut the chicken into 2cm/2in pieces.
Toss in the flour mixture until well coated.
Cover and set aside for 10 minutes.

(2) Heat the oil in a large pan or wok.
cook the chicken for 8-10 minutes.
stirring occasionally,
until golden.

(3) Peel and grate the ginger.
stir into the pan with remaining flour,
the stock and sugar.
Bring to the boil and...
cook for 5 minutes, or
until the chicken is tender and
the sauce is reduced.

(4) Blend the egg yolk and lemon juice
and add to the pan, stirring
occasionally,
until the sauce is thickens.
stir in the coriander and season.

ready to serve.


Variation:
You can replace the chicken thighs
with boneless breast or leg meat.

Serving Tips:
Serve with boiled rice or egg noodles
tossed with little fresh parsley,
and steamed broccoli.

Cook's Tip
Fresh chicken stock gives a
better flavour then cubs.
