MUTTON CURRY
Ingredients:-
1 kg mutton (boneless cubes)
6 cardamoms
1 bay-leaf
5/6 cup oil
2g saffron
3tbsp. Garlic paste
1 boiled egg
4 cinnamon
8 cloves
1/2 cup yoghurt
1/2 tsp black pepper
3tbsp. Ginger paste
3 tbsp. Green chilli paste
Salt to taste
Preparation of Mutton Curry
Heat oil, add cinnamon, cardamom, cloves and bay leaf. When brown put ginger, garlic, green chilli paste. Saute for a few minutes and add yoghurt and mutton cubes. Put it in a glass dish, cover it and micro it for 10 minutes and then stand it for 5 minutes. When meat is tender, add salt, pepper and saffron and micro it further for 3-4 minutes. Stand it for another minute and serve.
To Serve: garnish with quartered boiled egg and mint. A squeeze of lemon juice will greatly enhance the taste. (For chicken curry use chicken instead of mutton).
Kofta
For the Gravy:
3 onions finely chopped.
3 tomatoes.
2 tsp chili powder.
2 ½ tsp coriander powder.
¼ tsp turmeric powder.
1 tsp ginger garlic paste.
1 tsp cummin paste.
1 tbsp finely chopped coriander leaves.
5- tbsp oil.
3 cloves.
2 cardamoms.
2 Bay leaves.
4-5 green chilies finely chopped.
For the Koftas:
½ kg mutton minced.
1 egg.
3 tbsp finely chopped coriander leaves.
½ tsp cummin seeds.
½ tsp red chili powder.
½ tsp coriander powder.
Salt to taste.
Directions:
To make koftas
After washing the mince, squeeze out the water and mix it with all the other ingredients for koftas, make medium sized balls of this mixture and deep-fry them. Keep aside
For the gravy
Fry the chopped green chilies and onion along with the cummin seeds, bay leaves and the ginger garlic paste until golden brown. To this add the ground tomatoes, cardamom, cloves, salt and other ground spices, fry on a low flame. Put the koftas in the gravy and cook till the koftas leave water and add water only if required. Serve hot garnished with coriander leaves.
Arabic-salad
Ingredients:-
2 tomatoes chopped
1 zuke, peeled and chopped
1/2 onion chopped very fine or several scallions
Toss with 2 tsp cumin, dash of coriander and some cayenne,
1-2 tbsp lemon juice,
1 tsp vinegar and salt.
Method:-
Add about a tablespoon of water and
"toss" with hands. (don't ask why it seems to taste better!) This
salad is especially tasty if it sits a bit... Serve at room temp with pita
bread and something else yummy like the soup above or felafil.
PINEAPPLE CAKE
Ingredients:-
2 large eggs
55 grams (2 oz.) self-raising flour
3 tablespoons melted butter or margarine
85 grams (3 oz.) sugar
200 grams (7 oz.) fresh cream
3 to 4 tablespoons powdered sugar
1 small can (450 grams) pineapple slices
A few cherries for decoration
Preparation of Pineapple cake :
Sieve the flour. Beat the eggs and sugar very well until thick and double in quantity. This should take 4 to 5 minutes. Add the flour, melted butter and two tablespoons of hot water. Mix very well with a metal spoon. Grease and dust a 100 mm x 250 mm (4" x 10") tin. Pour the mixture into the prepared tin. Bake in hot oven at 400*C for 15 minutes and cool the cake. Divide the cake in two parts horizontally. Chop the pineapple slices very finely and keep aside the syrup. Pour a little syrup over the cake and allow to soak. Repeat after 10 minutes. Be sure that the cake is moist. Beat the cream with powdered sugar. Spread a little cream over one part. Sprinkle pineapple pieces over the cream, leaving a few for decoration. Put the other part of cake on top. Cover the cake completely with cream. Decorate with balance pineapple pieces and the cherries. Chill the cake. Cut into slices and serve.
